Italian Tomato Salad

This is a simple salad, but sometimes those are the best kind. In this case you should get very ripe tomatoes, fresh off the vine if possible, to combine with the cucumber, fresh mozzarella, and red onion.

4 cups (220 g) torn romaine lettuce

1 o 2 tomatoes, cut into wedges

3/4 cup (90 g) sliced cucumber

1/2 cup (80 g) thinly sliced red onion

1/2 cup (60 g) cubed fresh mozzarella

1/2 cup (120 ml) Italian Dressing (page 35)

Combine all the ingredients in a bowl and toss to mix.

Yield: 4 servings

Per serving: 98 calories (45% from fat, 23% from protein, 32% from carbohydrate); 6 g protein; 5 g total fat; 2 g saturated fat; 1 g monounsaturated fat; 1 g polyunsaturated fat; 8 g carbohydrate; 2 g fiber; 3 g sugar; 126 mg phosphorus; 151 mg calcium; 20 mg sodium; 320 mg potassium; 3594 IU vitamin A; 22 mg ATE vitamin E; 25 mg vitamin C; 11 mg cholesterol
